Dry white wine is made fruity and flared to eliminate alcohol content, then marinated for a long while in saffron, this improves it colour and taste. The mixture is then simmered long enough for it to be transformed into marmalade. This speciality “Suprême” is greatly enjoyed with foie gras, ripened cheese or in toasts. It is also great for cooking meats, giving it softness and aroma.
